Maltose is α- A disaccharide formed by connecting two glucose units with 1,4 glycosidic bonds, also known as malt disaccharide. Due to the different positions of C1 hydroxyl groups, there are two isomers, namely α- and β- Isomers. According to the different mass fraction of maltose, maltose syrup can be divided into ordinary maltose syrup, high maltose syrup and ultra-high maltose syrup. Maltose syrup with a mass fraction of less than 60% maltose is ordinary maltose syrup, high maltose syrup with a mass fraction of 60% ~ 70%, and ultra-high maltose syrup with a mass fraction of more than 70%.
